What is entrecôte steak
Entrecôte is the French word for a beef steak cut from between the ribs i.e. a thin, boneless rib-eye.
So, it’s really a nice cut for quick cooking, making it perfect for this beef carpaccio dish.
It’s a very tender and juicy cut, with lots of nice marbling.

So, for this dish, we’re talking high heat, flash cooking i.e. 30 seconds on each side, then very thinly cut.
Entrecôte steak
Here’s how to cook entrecôte steak:
- Take a hot (cast iron) pan, without adding any oil, place the steak in the centre of the pan, and cook for two minutes on one side.
- Turn the steak over and cook for two minutes on the other side.
- Turn over again and cook for a further two and a half minutes, flipping over onto each side to get a good amount of caramelisation onto the steak.
- Drop a good dollop of butter into the pan and baste the steak.
- Remove to a plate and rest for 5 – 10 minutes.

Rogan Josh spice mix
Rogan Josh is a popular, slow-cooked curry that originated in Kashmir, India.
It translates to “red meat” and is traditionally made with lamb or mutton.
The flavour is more aromatic than spicy hot.
If you have a good spice cupboard you can make some yourself.
This recipe makes enough for 2 – 3.
Ingredients
- 1 tablespoon paprika
- 1¼ teaspoons ground cumin
- 1 teaspoon garlic powder
- ¾ teaspoon ground ginger
- ¾ teaspoon ground coriander
- ¾ teaspoon black pepper
- ¼ teaspoon cayenne pepper for mild heat (add another ⅛-¼ teaspoon for more kick)
- ½ teaspoon ground cardamom
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- pinch saffron (about 20-25 threads)
Directions
Grind the saffron with a mortar and pestle, then add all the ingredients together and mix well.

Ingredients
- 200 g (grass-fed) entrecote steak
- 2 large tomatoes
- 2 shallots, sliced thinly
- 1 tbsp caster sugar
- 4 tbsp cider vinegar
- sea salt for seasoning
Instructions
- An hour before cooking, coat your entrecôte steak in rogan josh spice or paste (I use store bought). Let it marinade for at least an hour.
- In a bowl, add aster sugar and cider vinegar. Mix well. Add the shallots, making sure they are covered by the mix and leave for 15 – 20 mins.
- Slice your tomatoes and set aside.
- Heat your cast iron pan so it's smoking hot, then add the entrecôte steak and cook for 30 seconds on each side. Remove and rest.
- Plate your dish. Tomato slices, followed by very thin slices of beef, scatter the pickled shallots over and season with salt.Serve.
