(grass-fed) entrecote steak

large tomatoes
2
shallots, sliced thinly
1
tbsp
caster sugar
4
tbsp
cider vinegar
sea salt for seasoning
Instructions
An hour before cooking, coat your entrecôte steak in rogan josh spice or paste (I use store bought). Let it marinade for at least an hour.
In a bowl, add aster sugar and cider vinegar. Mix well. Add the shallots, making sure they are covered by the mix and leave for 15 - 20 mins.
Slice your tomatoes and set aside.
Heat your cast iron pan so it's smoking hot, then add the entrecôte steak and cook for 30 seconds on each side. Remove and rest.
Plate your dish. Tomato slices, followed by very thin slices of beef, scatter the pickled shallots over and season with salt.
Serve.
