1tspdried mint or a handful of fresh mint, chopped

a variety of your favourite vegetables to roast - butternut squash, carrots, potatoes
250ggreens - any you'd like to add to your dish at the end
Instructions
First marinate the lamb. Mix the oil, lemon juice, garlic and mint in a bowl and add plenty of seasoning. Add the lamb steaks and rub the mixture into them. Set aside.
Turn your oven on to 200C and prep some vegetables to roast, then add to a baking tray add, drizzle some oil over top and season - mix it altogether and pp in the oven for 20 - 30 mins or until almost done.
Arrange the lamb steaks over the vegetables (approx. 10 mins before the vegetables are done), put the tin back in the oven for 10 minutes. Remove and leave to stand for 5 minutes, and serve.
