Ingredients
500gbeef mince (grass-fed if you can)
1large onion, diced
2garlic cloves, minced
1tspheaped hot chilli powder
1tsppaprika
1tspground cumin
1/2tsporegano
1beef stock cube
1tspsugar (or a couple of pieces of dark chocolate)
2tbsptomato puree
1 -2 x 400 gtinned tomatoes
1 x 400gkidney beans (optional)
Instructions
In a large deep pan, on medium, add some oil and sweat off the diced onion - approx. 5 mins).
Add in the garlic, hot chilli powder, paprika, ground cumin, and oregano.
Add the minced beef and cook it, using a wooden spoon to break the meat up and mix in with the spices.
Crumble the beef stock cube into 300ml hot water and add to the beef. Then add the tomato paste, tinned tomatoes, sugar (and dark chocolate) and stir well.Taste and season to your liking.Leave on a low heat and let gently cook for 1 - 2 hours. Keep an eye on it and add any extra liquid if it looks like it's drying out. Give the occasional stir.
Serve with rice, tacos or in a bowl with rustic bread.
