There are few things more comforting than a big, steamy bowl of noodle soup — especially one that hums with fresh lime, fiery ginger, and a cheeky mix of spices that’ll wake up your taste buds.

This Lime & Ginger Chicken Noodle Soup is my go-to when I’m craving something nourishing but not heavy.

It’s light, bright, and deeply satisfying.

The Magic of That Spice Mix

The base of this soup is where the magic happens. It’s the Spice Mix — a simple but powerful combination of ground coriander, turmeric, cumin, and a pinch (or two!) of chilli flakes. You can also buy Thai Spice mix in the supermarket of online and keep it in your spice drawer.

When these spices hit the pan with a glug of oil and a bit of grated ginger, the smell is amazing.

Ginger, Lime, and Layers of Comfort

The ginger in this recipe is the heart-thumper — it adds warmth that goes straight to your bones.

Fresh, sharp, and a little spicy, it gives that comforting “I’m fighting off a cold” energy even when you’re just having a midweek wobble.

Then there’s the lime — squeezed in right at the end, so you don’t lose that bright, citrusy punch. It lifts everything.

The Chicken: Buy Well, Eat Well

Now, let’s talk about the chicken. This dish deserves good, high-welfare chicken.

In the UK, look for free-rangeRSPCA Assured, or organic labels. Yes, it’s a little pricier, but the flavour difference is enormous — not to mention the peace of mind knowing the birds lived better lives.

High-welfare chicken tends to have firmer, juicier meat that holds up beautifully in broth.

If you can, buy bone-in thighs or a whole bird and poach it yourself — the bones add body to the stock, giving you a rich, silky broth that no stock cube can ever match.

But I like simple and fast so in this recipe, I have diced organic chicken breasts.

Building the Bowl

Once your spices and aromatics have worked their magic, pour in the coconut milk (a dash of water), add the chicken, and let it all simmer until everything smells like comfort itself.

Drop in a handful of noodles — udon noodles or egg noodles both work — and watch them soak up all that goodness.

Finish with a squeeze of fresh lime, a handful of chopped coriander, and maybe a few extra chilli flakes if you’re feeling bold.
