Jerk rub recipe

If you have a load of spices in your cupboard, you can make your own Jerk rub.

It’s a lot of spices so I personally cheat and buy a rub from a supermarket or quality online shop.

  1. Add all of the ingredients to a small mixing bowl.
  2. Mix it all together evenly.

Ingredients

  • 750 g grass-fed beef rump tail
  • 2 tbsp jerk rub (store bought or recipe in blog)
  • 2 tbsp oil
  • 1 garlic clove, thinly sliced
  • 5 cm piece of ginger, grate
  • 4 tbsp sesame seed oil
  • 1 – 2 tbsp soy sauce
  • 100 g green beans, chopped
  • 200 g spinach
  • 1 sweet pepper, chopped
  • 1 courgette, chopped

Instructions

  • Rub the beef with jerk rub and set to the side to bring to room temp.
  • Chop the vegetables ready for cooking.
  • In a pan on medium, add some oil and cook the beef for approximately 7 mins on each side. Remove to a plate.
  • In another pan, add sesame seed oil and gently fry the garlic and ginger before adding all the vegetable except the spinach.
    Add some soy and mix altogether before adding the spinach.
    Cook until your vegetables are done to your desired level of crunch.
  • Slice the beef against the grain and on a large plate, lay the vegetables and the beef on top and let everyone dig in.
