Midweek meals never tasted so good
This midweek one-pan sausage, roasted squash, and gnocchi is a real family crowd-pleaser.

I love this dish.
It’s a new one to me and was inspired by the Pipers Farm Cookbook.
The biggest adaptation I made was to not make squash gnocchi.
I didn’t have the time, although it sounds lovely.
So, I went for bought gnocchi (which I often keep in my freezer).
And roasted the squash to add to the dish as its own ingredient – let it sing!
One-pan sausage, roasted squash and gnocchi
Well, it’s almost one pan.
You do have to use a roasting tray for the squash and sausages.
But then you’re done.
And I serve this dish in the middle of the table from the pan I cooked it in.
It looks fab and then people can serve themselves.
Ingredients
- Olive oil
- 6 pork sausages
- 1 butternut squash, peeled and chopped into large chunks
- 1 tbsp butter
- 2 garlic cloves, thinly sliced
- 1 small bunch of fresh thyme, chopped
- 3 sprigs of fresh sage, leaves picked
- 250 ml white wine
- 200 ml single cream
- 200 g baby spinach
- 1 small bunch of parsley, chopped
Method
- Preheat the oven to 200C/400F.
- Place the butternut squash into a large roasting dish, drizzle with some olive oil, and season.
- Add the sausages into the roasting tray as well and cook for 20-25mins or until done. Place to the side.
- Once the sausages are cool enough, cut them into 1 – 2 cm pieces.
- In a large frying pan, on medium, add the butter, garlic, thyme, and sage and little cook for a couple of minutes then add the sausages. Add the wine and let reduce until almost gone, then the cream and reduce by approx. 1/3.
- In a pan of salted boiling water, cook your gnocchi (follow the packet’s instructions).
- When done, add the cooked gnocchi to the pan with the spinach and combine everything (add a splash of water if needed to help the spinach wilt)
- Sprinkle with chopped parsley and serve.
