I love this simple chicken and mushroom alfredo.

It’s really quick to whip up and tastes amazing.

Plus, if you want to make it vegetarian, then simply remove the chicken from the recipe.

I thought I’d add how to make a simple alfredo sauce first.

Then you can go crazy with your own flavours and ingredients using alfredo sauce.

  1. Melt the butter in a pan over medium-low heat and fry the garlic for 1 min until softened but not browned.
  2. Stir in the cream and mixed herbs, and bring the cream to a gentle simmer, lowering the temperature if necessary.
  3. Add the parmesan, stirring continuously until it has melted.
  4. Sprinkle over the parsley.
  5. Fold into the cooked pasta and serve.

  1. Start by cooking your dried pasta as per the packet instructions.
  2. In a pan over medium-high heat, melt butter, then add the chicken breast.
  3. Season with salt, pepper, and oregano, and cook 8-10 minutes or until the chicken is fully cooked. Remove from heat and set aside.
  4. In the same pan over medium heat, melt butter and add the garlic. Cook until the garlic begins to soften.
  5. Then whisk in the double cream and grated parmesan cheese. Cook the sauce over medium-low heat until smooth.
  6. Add the cooked pasta, mushrooms, and chicken to the sauce.
  7. Toss everything together until well-combined and remove from heat.
  8. Season with salt, and pepper.
