2cupscheddar cheese or any you like to use to grill
2 spring onionsthinly sliced to serve

To make pulled chicken
Put the chicken breast into a pan and boil for 5-10 minutes or until the chicken is no longer pink.
Take out of water and cool for a little, then using two forks, shred in a bowl.
In the bowl, season the shredded chicken with the chilli powder or hot paprika and salt and pepper. Leave to one side to do the quesadilla mix.
In a large fry pan, over medium-high heat, heat olive oil. Add the onion and peppers and season with salt and pepper. Cook until soft (approx. 5 minutes) then add the shredded chicken and mix all together.
Taste to ensure you have the right seasoning. You can add a little more chilli power or paprika if you want a bit more punch.
Once done, move all the ingredients to a plate and set to the side of your hob so you can begin building your tortilla's.
Building your quesadilla's
Heat a tablespoon of vegetable oil over medium-high heat
Add 1 flour tortilla to the frying pan and sprinkle the cheese, cooked chicken, pepper and onion mixture.
Fold the other half of the tortilla over and cook. Use a pan lid or something heavy to carefully weigh everything down.
Cook for approx 2 - 3 minutes each side or once golden and the cheese melted.
Repeat to make all your tasty quesadilla's and serve with a sprinkle of green onions, lime wedges and sour cream.
TIPYou could add black beans or avocado or anything you like to make your own version of this recipe.
