In your fry pan heat, the olive oil, add the mince and brown then set aside. You may want to do in batches to make it faster and easier to brown
Now in the same pan (but tip out any juice from the meat), add olive oil and cook the onion, garlic, carrot, and celery until they're soft (approx 5 mins). Then stir in the tomato paste
Tip back into the pan the browned mince and add in the 3 cups of beef stock. Bring to the boil then simmer until it's reduced and the sauce is thicker. Season
In the meantime, boil a couple of eggs to your liking (*runny yolk = 5 minutes; hard boiled = 7 - 8 minutes)
Cut a fresh baguette or country-style bread, butter, add your mince to your toast and your egg on top... Mince on Toast!
